Fresh Strawberry Granita

Granita, or Italian Ice, is a simple and delicious dessert made with only 4 ingredients. One of them is often the traditional, beloved Cherokee fruit, strawberries. June is strawberry season. Use locally grown strawberries or pick-yourself strawberries for the best flavor. Large supermarket strawberries have only a hint of strawberry flavor and often have a grainy texture because their natural sugar transforms to starch as soon as they are picked.

1 cup water, hot

3/4 cup sugar

2 tablespoons Fresh lemon juice

3 cups Fresh strawberries, stems removed and sliced

10 Fresh strawberries, stems intact for garnish


Add hot water to a small bowl. Add sugar and lemon juice and stir well to make a sugar syrup.

Blend 3 cups of strawberries in a processor until smooth. For a more rustic presentation, mash the strawberries to a pulp using a fork.

Add the sugar syrup to the strawberries and blend until well combined.

Pour the mixture into a 13 x 9 x 2 metal baking dish. Freeze. During the freezing process, stir the icy portions into the middle of the pan about every 20 minutes until completely frozen, about 1 1/2 hours.

After completely frozen, using a fork, scrape the frozen ice mixture into flaky crystals. Cover tightly and keep frozen. Scrape the granita into serving bowls, garnish with fresh berries and serve.

Strawberry Granita

Just about any fruit that can be pulverized can be used in this recipe. Try watermelon, huckleberries, cherries or honey dew melon.
